Fruits and Vegetables!!!!!!!!!!!! :)

I never realized how important and crucial fruits and vegetables could be to one’s health. Today I can tell you that after what has happened to my body and the transformation I have undergone…it is real. You really do need to eat your fruits and vegetables if you want to live a healthy lifestyle. I always thought I ate healthy as a kid and even in my adolescent years. However, even though I was eating healthier than the average American I was still not eating a healthy diet.

Let’s look at the American diet. Obviously there is nothing healthy that comes out of a fast food restaurant. So we don’t even have to analyze that diet. We all know that stuff will kill you faster than most diseases in third world countries. However, Americans continue to eat out at fast food joints once, twice a day b/c it’s fast, easy and cheap. It’s the easy way out. Not many Americans want to take the time to learn how to cook, grocery shop or eat healthy. That’s okay, it’s their choice, nothing wrong with that. That is why the obesity rate in this country is sky high. Well it’s one of the reasons anyway.

I have met with plenty of doctors over the past few months and years. All of them have told me that, the most important and direct factor associated with your health is what you EAT. What you put into your body. You really are what you EAT.

I am required to be on a strict diet b/c I developed food allergies for unknown reasons. So it’s easier for me to adhere to such a strict diet, if I don’t I get sick. However, I must admit, it hasn’t been as bad as I have thought it would be.  Now I eat a gluten free/egg free vegan diet. That may sound disgusting. It’s really not. My culinary mind has been challenged. I have started making incredible meals since accepting the challenge. I could have crawled into a hole and wanted to die b/c I couldn’t eat eggs and cheese on a bagel, pizza, ice cream, cakes, fast food, milk, butter, pasta, etc. but i didn’t. I rose to the occasion. It feels great.

I once thought Tofu was disgusting. I had never even tried it! It is good. All you do is shallow fry it w/whatever spices you want and add it to pasta/rice etc. Throw in some veggies and pecorino romano cheese (the KING of all cheeses) and you are made in the shade!

I’m not saying everyone should be like me or that this diet is right for everyone. To each his/her own. All i’m saying is, it’s worked for me. I am the healthiest I have been in my entire life. My blood pressure was 102 over 74 yesterday morning. That is 18 points LOWER than it was just a year ago when I thought I was eating healthy. If you want to lose weight AND live a healthier lifestyle AND be much happier, try my diet out. It won’t be easy in the beginning, but anything that is worth anything…is never easy. Hard work and determination ALWAYS equals results!
