Gluten/Dairy Free for 6 months…

It’s been 6 months since I had a blood test and found out that I have some form of gluten/dairy allergy. After doing a lot of research on what was affecting me I can now say that I feel a little better than I did many months ago. It has been a long couple of years now since I knew something wasn’t right with my body. Now that I have a better understanding of what is going on and what I can and can not eat it is a little easier. Yes, I do miss certain things…pizza, cheeseburgers, egg and cheese on a bagel, milk, bread, pies, cakes, pasta, etc. However, I eat a lot healthier now, even healthier than before. And I can really taste the food i’m eating now. Almost everything I eat is organic and fresh. I am not a vegan. I can still eat meat and fish. I do eat vegan cheeses sometimes and different kinds of gluten free breads, but it’s not the same. However, every couple of days or so I experiment to make a really tasty new meal. My culinary mind is forced to! What would you do if you had celiac disease AND you couldn’t eat any dairy products???

Take it from a first hand experience, it is impossible, life does exist after bread and cheese. It starts with RICE and SOYBEANS! Haha. I would say the majority of what I eat now comes from rice and soybeans. You’d be surprised what you can make from a soybean! I wonder if my truck would run on soybeans? Anyway, another bonus to the new diet I have been on is that I don’t have to work out quite as much as I used to. I simply don’t eat as much calories or as much fat as I used to. So there’s a positive. Unless of course you love the gym and go there all the time, which is fine. But I don’t love it as much as I used to. Anyway, I still love food, I just have to really try hard to get the culinary juices flowing inside my brain to come up with something that is really tasty…which isn’t a bad thing…it’s just something new to explore in this thing we call life…

Gluten/Dairy Free Chocolate Chip Cookies

When you find out you are allergic to all gluten (wheat products) and all dairy (cow’s milk/cheese) products then a few cravings develop over time. One of them being chocolate chip cookies (and milk). One of my favorite desserts or snacks of all time is choc chip cookies and milk. Over the past 6 months or so since I found out of my allergies it has been a rough ride going w/out things I was so used to eating all the time. It has been difficult trying to find alternatives to the things I love, w/out weird aftertastes. Today, I finally found a decent GF/DF chocolate chip cookie mix. Very, very easy to make and healthy for you as well. Not really too expensive when you add up all the costs. $5.49 for a 14 oz bag of mix.  The way I knew it was good, i slightly overate. On this new diet of mine, I almost never do that b/c the food I eat now is okay, but certaintly doesn’t make you want to keep eating it to the point of being sick like an amazing pizza or a hot stromboli. If you want the name of the mix, let me know. More GF/DF food to come.

I Am Legend Review

First of all, you have to like Will Smith to go see this movie and enjoy it. It’s based on a book, and the story goes like this: Will Smith plays a scientist trying to develop a cure for a disease that has taken over the world. If 99% of the population is infected, who do u think you see a lot of in the movie? You guessed it, Will Smith, oh and his german shepherd as well. Most of which is computer animated, yet you fall in love with the dog rather quickly. (If you were the only person thought to be on earth, and you didn’t even like dogs, trust me, you would begin to love your dog, A LOT).

There are a lot of cool and rather creative things going on in this movie. For example, who doesn’t love bacon? What if there was no more bacon? What would you do if you had 1 slab of bacon left and you woke up one day and you saw a complete stranger eating your bacon you had saved for a special occasion? I am going to go out on a limb and say you wouldn’t be happy. I mean, really not happy.

I don’t want to ruin the movie for anyone b/c I thought it was very well done. I will admit that I think Will Smith is a great actor, but still it was a well done movie. Definitely worth the price of admission, even nowadays with gas being so high. If you like a little sci-fi, not too much horror, and some decent action and a good plot, go see it or rent it when it comes out.

Today’s Forecast

Cloudy with light snow developing after noon. An inch or less is likely with up to 2 or 3 inches in some localized areas by midnight. This will be more of a nuisance snow than anything else. Messy rush hour tonight. Otherwise, this will not be a big deal. The good news is that temperatures will warm up close to freezing with the advance of the moisture from the south. Some of the coldest air of the season will arrive Thursday-Friday. Look for overnight lows in the single digits along the coast and daytime highs in the teens to near 20!

First Post…Storm Tomorrow

Have to go into work. Forecast tomorrow: Slushy mess along the coast, east of I95. Minor accumulations of slush, if any. Rain showers to end. Mild Tomorrow. Temperatures tumble on Sunday. Wow, are they going to tumble, from the 20′s to sub zero readings with wind chills in the -20 degree range easily for Monday morning…
